Whenever it comes to an easy homemade bread recipe, this blueberry banana bread is always my number pick. It’s easy to prepare and never fall for expectations. Plus, it is made with my son’s favorite fruits; bananas and blueberries.

Making banana bread is so quick and only needs 10 minutes for active preparation. The best part of this recipe is the crazy moist and soft texture made with Greek yogurt. Besides, I used coconut oil instead of butter to keep it healthier than others.

Blueberry Banana Bread Ingredients

  • Over Ripe Bananas
  • Eggs
  • Coconut Oil
  • Greek Yogurt- Use either plain or flavored Greek yogurt for your preference.
  • All-Purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Brown Sugar- It gives the bread a nice golden brown color. You may also use granulated sugar as a substitute.

How To Make Blueberry Banana Bread?

First, combine all wet ingredients in a mixing bowl, and whisk until well combined. Then, sift all dry ingredients into the mixture, and keep whisking until incorporated.

Grease the baking pan with coconut oil, and fill the pan with an alternative layer of bother batter and fresh blueberries.

Transfer the batter and fresh blueberries to the baking pan.

Preheat the oven to 350°F (177°C), and bake for 55 to 60 minutes.

Tips

  • Over-ripe bananas are sweeter and easier to smash. The overripe mashed banana is much smoother in the batter than the fresh bananas.
  • Grease the pan with coconut oil or line the pan with parchment paper so the bread won’t stick in the pan.
  • Layer the blueberries between the batter so that they won’t sink to the bottom in the final result.
  • I used two small loaf baking pans for this recipe. A regular loaf baking pan also works.

Can I use frozen blueberries?

Yes, you may use either fresh or frozen blueberries. However, the frozen blueberries are more watery after defrosting. You may pat dry the frozen blueberries before adding them to the batter.

How long does blueberry banana bread last?

Store the leftover in an airtight container or a ziplock bag and refrigerate for up to 1 week. You may also keep the banana bread in the freezer for up to 2 months. Wrap the whole loaf or each slice individually with plastic wrap and store them in a ziplock bag.
Before serving, thaw the frozen banana bread at room temperature or microwave them for 20 to 30 seconds.

Ingredients

  • 2 Large Over Ripe Bananas (about 125 g each), mashed
  • 2 Eggs
  • 1/4 cup Coconut Oil, melted
  • 1/4 cup Greek Yogurt
  • 2 cups (230 g) All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3 tablespoons Brown Sugar
  • 1.5 cups Fresh Blueberries

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Add mashed bananas, eggs, coconut oil and greek yogurt to a large bowl, whisk until well combined. Set aside.
  3. Combine all-purpose flour, baking powder, baking soda, salt and brown sugar in another bowl, then sift into the mixture and whisk well until now no more powder.
  4. Grease two 5.75x3 inches small loaf pan with coconut oil, and add the batter to half of the pan. Distribute blueberries on top of the batter evenly and cover with more batter. Smooth the batter with a spatula, and top with more blueberries.
  5. Bake for 55 minutes to 1 hour. Once the bread has golden browned on the surface, insert a wooden pick in the center and come out clean, then the bread is ready.
  6. Remove the bread from the oven, and let it cool in the pan for 5 minutes then unmold. Cool down the bread completely on a rack then serve.

Notes

Tips:

  • Over-ripe bananas are sweeter and easier to smash. The mashed overripe banana is a lot smoother in the batter compared to the fresh bananas.
  • Grease the pan with coconut oil or line the pan with parchment paper so the bread won't stick in the pan.
  • Layer the blueberries in between the batter, so they won't sink to the bottom in the final result.
