  • Some people think head kneading is tough and tiring, which determines the texture of the bread. However, it is not too difficult to handle if you practice it correctly. Gently press down the dough with your bottom of the palm muscle, and fold it from the edge to the middle. Repeat the same direction again and again until the dough gets smooth. Never use your entire arm’s strength, making you feel tired easily and wouldn’t help for gluten to grow in the dough.

Ingredients

  • 150g Bread Flour
  • 100g Whole Wheat Flour 
  • 35g Brown Sugar
  • 3g Salt
  • 30g Egg
  • 130g Milk
  • 4g Active Dry Yeast
  • 25g Unsalted Butter 

Instructions

    1. Combine all the ingredients excepts butter in a large mixing bowl and mix well. Knead the dough until smooth, then add the butter. The butter should be at room temperature. Keep kneading the dough by hands for 15 minutes until it becomes smooth and elastic.
    2. Place the dough in the bowl and cover it with a plastic film. Transfer the bowl to the microwave, and let the dough rise with a hot water cup on the side. The proofing takes about 1 to 1.5 hours.
    3. Once the dough is raised to double the size, move it to the table and knead it to release the air from it. Divide the dough into 3 equal pieces, and roll them into balls. Let the dough sit on the table for 15 minutes with a plastic film covered.
    4. Flatten each dough to a long oval shape with a roller, then rolling the edges to the middle and roll it up.
    5. Set the dough in the baking loaf pan, cover it with a plastic film, and then place it in the oven for a second time proofing. And also, place a cup of boiling water on the side. The second time proofing takes about 1 to 1.5 hours as well, which the dough will rise to 80% of the loaf pan.
    6. Remove the baking loaf pan out of the oven. Pre-heat the oven to 356F, and bake it for 35 minutes.
