  • Combine heavy cream and lemon juice in a bowl, whisk well. Set aside.
  • Soften the cream cheese at room temperature. Combine the cream cheese with sugar in a bowl, and beat it with an electric hand whisk until smooth. Keep beating the mixture while adding the melted butter and followed by the egg until well combined.
  • Sift corn starch and all-purpose flour into the mixture, and mix well with a spatula. Slowly pour the heavy cream mixture into the batter and whisk well to smooth out the texture.
  • Add the cheesecake batter on top of the brownie in the baking dish, and evenly smooth out the surface with a spatula. Finally, decorate the cheesecake brownie with butter cookies on top.
  • Preheat the oven to 300°F (150°C). Place the baking dish in a baking tray, and fill the tray with boiling water. Transfer the cake into the oven, and bake it for 50 minutes.
