How To Make Chocolate Hot Cross Buns?

  • First, add bread flour, sugar, cocoa powder, active dry yeast, and milk to a large mixing bowl. Combine all ingredients with a stand mixer until incorporated. Add butter to it and keep kneading the dough until smooth and more elastic.
  • Then, add chocolate chips.
  • Cover the dough with plastic wrap and let it rise in a warm area for 1 to 1.5 hours or until doubled in size. (I usually leave the dough in the microwave and place a cup of hot boiling water aside).
  • Transfer the dough to a clean work surface and gently press it to release air.
  • Divided the dough into nine equal portions and roll each into a ball shape. Transfer the dough to a 9×9 inches baking pan lined with parchment paper. Cover and rise them for 1 hour in a warm area or until doubled in size.
  • Preheat the oven to 350°F (180°C).
  • Mix all-purpose flour and cold water to make the cross paste. Filled the mixture into a piping bag and pipe it onto the dough by drawing a continuous cross line.
  • Bake in the oven for 20 minutes.
  • Remove the chocolate hot cross buns from the oven and gently brush them with the sugar syrup glaze (whisk well of sugar powder and hot boiling water in a bowl) on top while still warm.

Tips

  • Mix and knead the dough with a stand mixer and hook attachment or a breadmaker is easier and effortless to process. The dough may be too sticky to knead by hand since the high moisture level.
  • Divide the dough into either 9 equal pieces or 12 smaller-sized pieces. You can bake the hot cross buns by using either a 9×9 inches square baking dish or a 9×13 inches rectangle baking pan.
