How to make honey cupcakes?

  • Preheat the oven to 320°F (or 160°C).
  • Add eggs, sugar, honey, and lemon juice in a large mixing bowl, beat all ingredients with a stand mixer attached with wire whip (or an electric hand mixer) on medium-high speed for 5 to 6 minutes until fluffy. Once the mixture drops consistently and holds the shape for 1 to 2 seconds, it is ready for the next step.
  • Sift all-purpose flour, baking powder, salt and corn oil into the egg mixture, and gently hold the bottom to the top a couple of times until no more powder remains. Don’t over mix it, which may deflate the cake once baked.
  • Line the muffin baking pan with paper liners, and fill each cupcake liner up to 3/4 full with the batter. Generously sprinkle white sesame seeds on each cupcake before baking.
  • Bake the cupcakes for 5 minutes at 320°F (or 160°C), then lower the temperature to 285°F (or 140°C) and continue baking for 15 minutes.
  • Remove the cupcakes from the oven, and cool down for 10 minutes in the baking pan. Transfer them to the cooling race and allow them to cool completely before serving.

Tips

To ensure the cupcakes have an airy and soft texture, you need to beat the whole eggs with sugar, honey and lemon juice on high speed with the stand mixer until fluffy. Gently mix the dry ingredients into the egg mixture to prevent deflating.
