How to make honey whole wheat oatmeal bread?

  • Cook the oatmeal with honey, sugar, and boiling water in a saucepan first. Let the cooked oatmeal cool down on the side.
  • Combine bread flour, whole wheat flour, active dry yeast, and oat milk in a large mixing bowl, and knead it to a dough with the stand mixer.
  • Add cooked oatmeal and butter to the dough, and knead to combine. Keep kneading the dough until it comes smooth and strong gluten forms. (If the dough turns into a thin transparent layer when you pull it, which means it is ready to proof.)
  • Cover the bowl with plastic wrap, and let the dough proof for one hour or until it turns to double the size.
  • Since the bread dough contains a high moisture level, it turns out more sticky after proofing. Sprinkle some bread flour over the table will help to avoid stickiness. Gently press the dough to release the air from it.
  • Divide the dough into 3 equal pieces. And roll each of them into a ball. Flaten each of them into a long oval with a roller, and roll them up.
  • Then place the dough into the baking pan. Let the dough rise for the second time until it fills the baking pan at room temperature.
  • Preheat the oven to 356F.

Ingredients

  • 185g Oat Milk (Water)
  • 95g Whole Wheat Flour 
  • 225g Bread Flour 
  • 4g Active Dry Yeast 
  • 80g Boiling Water 
  • 40g Oatmeal 
  • 40g Brown Sugar 
  • 15g Honey 
  • 24g Unsalted Butter 

Instructions

  1. Cook the oatmeal with brown sugar, honey, and boiling water in a saucepan on medium heat. Stir and cook the oatmeal for one minute, then turn off the heat. Set it aside. Let it cool down to room temperature.
  2. In a large mixing bowl, add whole wheat flour, bread flour, active dry year, and oat milk. Knead it into a dough with a stand mixer on speed 8.
  3. Add oatmeal mixture to the dough, and keep kneading it until well combined.
  4. Add butter to the dough, and keep kneading it until the dough becomes smooth with more strength. It takes about 15 minutes to get the perfect dough with a stand mixer.
  5. Cover the bowl with plastic wrap, and let the dough proof in the microwave for 1 hour or until it becomes double the size.
  6. Sprinkle some bread flour over the table to avoid stickiness, and place the dough on it. Gently press the dough to release the air from it.
  7. Divide the dough into 3 equal pieces. And roll each of them into a ball.
