Ingredients

  • 200g Cream Cheese 
  • 100g Granulated Sugar 
  • 50g Greek Yogurt 
  • 180g Sour Cream 
  • 50g White Chocolate
  • 2 Egg
  • 9g Lemon Juice 
  • 20g Cornstarch 
  • 1/2 Tsp Vanilla Bean Paste 

Instructions

    1. Preheat the oven to 350 F. Lien a piece of parchment paper sheet on the baking dish.
    2. Prepare boiling water in a pot. Mixing Cream cheese and sugar in a large bowl, and heat it over boiling water. Keep stirring it while heating until it becomes smooth. Then set it aside.
    3. Add sour cream and yogurt to a different bowl, and whisk well.
    4. add 2 eggs into the Sour cream and yogurt mixture, one at each time. Then, squeeze the lemon juice into the mixture at the same time and whisk well. Sift the cornstarch into it and mix well with a spatula. Set the batter aside.
    5. Lastly, heat the heavy cream in a saucepan over a moderate fire. Add the white chocolate and vanilla bean paste while simmering, and keep stirring until the chocolates are dissolved. Then turn off the heat.
    6. Combining all 3 mixtures into one bowl and whisk well until smooth and silky. Then strain it into the small rectangle baking dish with a colander to get rid of the lumps.
    7. Fill the boiled water into the large rectangle baking dish, and place the small baking dish in it. We need to bake the cake with the hot-water bath method.Japanese creamy cheesecake
    8. Bake the cheesecake at 350F for 25 minutes, then switch to 300F and bake it for another 20 minutes.
    9. Once the cheesecake is baked, remove it from the oven and let it cool down completely before refrigerating.
    10. Refrigerate the cheesecake for 4 hours before serving.
