 136 g dried lotus
 20 g sugar
 30 g maltose
 55 g vegetable oil

Presoak the dried lotus in water for at least 5 hours.

Rinse the lotus seed in water then remove the cores in the middle of each one

Transfer the lotus seed into Instapot or a cooking pot. Cook it for 1.5 hours in order to get a soft and moist texture.

Transfer the lotus seed to a blender. Blend the lotus seeds with 1/3 cup of water until it becomes really smooth.

Transfer the blended lotus seed into a non-stick frypan; stir in sugar. Then add vegetable oil by three batches. Keep stirring while adding the oil each time until it gets totally absorbed.

Add maltose, and keep stirring. The water should be evaporated during frying and stirring. After about 30 minutes (depends on how much water in the mixture), the mixture should be turned to a sticky moist paste texture.

Transfer it to a glass container and cover it with plastic wrap; allow it cool down.
