The red bean paste bread- Anpan is a fresh sweet roll with red bean paste inside. People have it for their breakfast and afternoon snacks. It was my favorite bread throughout my childhood, that I almost had it every day before I went to school.
The red bean paste bread is also called Anpan in Japanese, which you can easily get anywhere in Japan. The reason why Anpan is so famous in Japan is because of the cartoon “Anpan Man.” People love it because it’s cute and sweet. There is even an Anpan Man children’s museum located at Yokohoma, Japan, which has hundreds of thousands of visitors go there every day. The Anpan bread is their signature souvenir in the gift shop.
Yes, today, I’m going to make the same bread that the museum is selling. Follow my recipe below, and you will find an easy way to do it.
Place bread flour, all-purpose flour, sugar, sea salt, dry instant yeast in the mixer bowl. Pour the milk, water, and the beaten egg into the mixture. Mix it.
Knead the dough on a flat surface for 2 minutes, and add butter into the batter. Keep kneading for another 20 minutes.
Transfer the dough to the mixer bowl and cover with a plastic wrap. Let it rise for 1 to 2 hours.
Poke in the middle of the dough; if it doesn't go back, that means the dough is ready for the next step.
Transfer the dough to a flat surface, press it to release the air. Knead it and shape it to a ball. Divide it into eight pieces.
Knead each piece and shape to a ball. Sit it covered with plastic wrap for 15 minutes.
(Here I add some coloring powder into the dough for the later decoration use, and it's not necessary if you don't want to.)
Take one dough and flatten the piece by your palm. Fill the red bean paste in the middle of it and seal it roll into a ball.
Transfer the dough to the baking pan. Place the baking pan in a warm area to allow the dough to rise for another 15 minutes. (I left my baking pan in the microwave with a cup of hot water, which provide an excellent temperature to let it rise)
Prepare the egg solution (1 egg yolk and 2 tsp water), brush on the top of the dough to have a darker color after it's baked.
Pre-heat the oven to 380F, bake for 18 to 20 minutes.
Decorate the bread with melted chocolates.
