WHAT ARE THE INGREDIENTS FOR SPRING ONION BUTTER COOKIES?

  • Unsalted Butter
  • Icing Sugar
  • Egg
  • Salt
  • Spring Onion (or Scallion)
  • All-purpose Flour

HOW TO MAKE SPRING ONION BUTTER COOKIES?

  • Soften the butter at room temperature before use. Add butter and icing sugar to a mixing bowl, and beat the butter with an electric hand mixer until pale and fluffy.
  • Slowly add the egg in 3 batches to the butter mixture while beating. Keep beating the mixture until the egg dissolved completely.
  • Add salt and chopped scallion to the mixture, and whisk well. Then, sift the flour into the mixture and combine well with a spatula.

  • Transfer the batter into a pipping bag attached with a pipping tip.
  • Squeeze out the batter on a silicone pad (or parchment paper) lined baking pan and arrange each piece from around 1 inch apart.

TIPS

  • Soft the butter at room temperature for 20 to 30 minutes for the best result. Depending on the weather, if make butter cookies in winter, leave the butter out for 30 minutes before use. In summer, the butter should take less time to be softened. Gently pressing the butter with your finger will make a significant indent, which means it’s ready to beat. Make sure the butter is not too soft when mixing with other ingredients; otherwise, it will cause your butter cookies to deflate after baking.

  • 2 tablespoons Icing Sugar
  • 1/2 Egg (about 2 1/2 tablespoons)
  • 1/2 teaspoon Salt
  • 3 stalks Spring Onion (or scallion), finely chopped
  • 3/4 cup All-purpose Flour

Instructions

  1. Preheat oven to 356°F (180°C).
  2. Soften the butter at room temperature before use. Add butter and icing sugar to a mixing bowl, beat the butter on high speed with an electric hand mixer for 2 to 3 minutes until pale and fluffy.
  3. Slowly add the egg with three (3) batches to the butter mixture while beating. Keep beating the mixture until the egg dissolved completely.
  4. Add salt and chopped scallion to the mixture, whisk well.
  5. Finally, sift the flour into the mixture and combine well with a spatula.
  6. Put a flower-shaped piping tip to the piping bag and add batter.
  7. Squeeze out the batter on a silicone pad (or parchment paper) lined baking pan and arrange each piece from around 1 inch apart.
  8. Bake for 15 minutes until golden brown on the edges.
