- 2 3/4 cups (300 grams) Bread Flour
- 3 1/2 tablespoons (45 grams) Sugar
- 1 tablespoon (12 grams) Cocoa Powder
- 1 tablespoon (10 grams) Milk Powder
- 1 teaspoon (3 grams) Active Dry Yeast
- 1 Egg (55 grams without shell)
- 2/3 cups + 1 tablespoon (165 grams) Milk
- 1 3/4 tablespoons (25 grams) Unsalted Butter, softened
- 1 pack of Chocolate Bar (45 grams), break into small pieces
Instructions
- Combine bread flour, sugar, cocoa powder, milk powder, and active dry yeast in a large mixing bowl and set aside.
- In a separate bowl, whisk together egg and milk, and combine them with the dry ingredients.
- Use a stand mixer with a dough hook attachment to knead the dough. Knead the dough over medium speed for 5 minutes until all ingredients are well incorporated. Add softened butter, and continue kneading for 10 minutes until the dough becomes smooth and more elastic, forming a windowpane. (If the dough forms a thin, transparent layer without breaking it while stretching. It means the kneading process is completed).
- Cover the dough with plastic wrap and leave it in a warm place to rise for 45 minutes or until doubled in size.
- After the first proofing, transfer the dough onto a floured surface. Gently press to release the air from it and divide it into 12 (or 16) equal pieces. Round each piece into a ball and set them aside. Cover them with plastic wrap. Allow the dough to rest for 15 minutes at room temperature.
- Meanwhile, line a 9x9 inch baking dish with parchment paper and set it aside.
