Ingredients

  • 2 3/4 cups (300 grams) Bread Flour
  • 3 1/2 tablespoons (45 grams) Sugar
  • 1 tablespoon (12 grams) Cocoa Powder
  • 1 tablespoon (10 grams) Milk Powder
  • 1 teaspoon (3 grams) Active Dry Yeast
  • 1 Egg (55 grams without shell)
  • 2/3 cups + 1 tablespoon (165 grams) Milk
  • 1 3/4 tablespoons (25 grams) Unsalted Butter, softened
  • 1 pack of Chocolate Bar (45 grams), break into small pieces

Instructions

  1. Combine bread flour, sugar, cocoa powder, milk powder, and active dry yeast in a large mixing bowl and set aside.
  2. In a separate bowl, whisk together egg and milk, and combine them with the dry ingredients.
  3. Use a stand mixer with a dough hook attachment to knead the dough. Knead the dough over medium speed for 5 minutes until all ingredients are well incorporated. Add softened butter, and continue kneading for 10 minutes until the dough becomes smooth and more elastic, forming a windowpane. (If the dough forms a thin, transparent layer without breaking it while stretching. It means the kneading process is completed).
  4. Cover the dough with plastic wrap and leave it in a warm place to rise for 45 minutes or until doubled in size.
  5. After the first proofing, transfer the dough onto a floured surface. Gently press to release the air from it and divide it into 12 (or 16) equal pieces. Round each piece into a ball and set them aside. Cover them with plastic wrap. Allow the dough to rest for 15 minutes at room temperature.
  6. Meanwhile, line a 9x9 inch baking dish with parchment paper and set it aside.
  7. Shape and add the filling. Flatten each piece with a rolling pin, place a piece of chocolate in the center, close it, and pinch the edges to seal tightly. Transfer the shaped dough to the prepared baking dish. (Repeat until all ingredients are used).
  8. Place the dough in the oven and a cup of hot water aside. Allow the dough to rise for 45 minutes to 1 hour or until it becomes puffy and doubled in size. Remove the dough from the oven. Lightly sift bread flour on top.
  9. Preheat the oven to 180°C (356°F). Bake for 15 minutes. Remove the bread from the oven and enjoy.
