I was amazed by how delicious this bread turned out on my first bite, although I wasn’t a big fan of ham. The overloaded cheese melts in the bread when it is freshly baked from the oven. And I enjoyed every bite with the harmonious taste of sweet and savory from this bread. Besides, ham turns out not too salty alone with the sweet bread. Meanwhile, the topping of the extra cheese and sliced onion makes it more flavorful.

What are the ingredients?

  • Bread Dough

How to make Ham and Cheese Bread Loaf?

  • Combining all the ingredients in a large mixing bowl except butter. Knead it into a dough with a stand mixer. Then, add butter into it, keep kneading the dough until it becomes smooth. Pull out a small piece from the dough and extend to stretch it into a transparent piece.
  • Set the dough in the mixing bowl and let it rise into double the size with plastic wrap covered. I’m used to leaving the bowl in the microwave with a cup of hot water on the side, which helps to reduce the proofing time.
  • After first proofing, transfer the dough to the table after proofing, and gently press the dough to release the air from it. Do not knead the dough.
  • Divide the dough into 3 equal pieces, and roll them into balls. Cover them with plastic wrap, and let them rest for 15 minutes.
  • Take one dough, flatten and shape it into a long oval with a roller. Place 2 slices of ham and some shredded cheese over the dough, then roll it up.
  • Then cut it vertically in the middle.
  • Transfer them to the loaf baking pan, and place it with the cutting side face up. Repeat the same instruction for the rest of the two doughs.
  • Cover the loaf baking pan with plastic wrap, and let it rise into 80% full of the pan at room temperature.
  • After second proofing, remove the wrap on the baking pan. Drizzling the mayonnaise, and sprinkle the sliced onion and shredded cheese over it.
  • Preheat oven to 356F, and bake it for 40 minutes.

How do you store the bread?

  • Let the bread cool down completely before putting it into a plastic bag, and keep it at room temperature for up to 3 days. The bread remains soft and fresh after 2 to 3 days.
  • Keep the bread for a longer time by cutting it into slices, then wrap each of them with plastic film. Keep them in the freezer for up to 2 weeks. Reheat the bread in the oven at 356F for 10 minutes.

Ingredients

  • 275g Bread Flour 
  • 30g White Granulated Sugar 
  • 3g Active Dry Yeast 
  • 3g Salt
  • 1 Whole Egg (55g)
  • 140g Milk 
  • 25g Unsalted Butter 
  • 6 slices Ham 
  • 10g Shredded Mexican Cheese 
  • 10g Shredded Mozzarella Cheese 
  • Half Sliced Onion 
  • 2g Japanese Mayonnaise Kewpie

Instructions

  1. Combine bread flour, salt, sugar, active dry yeast, egg, and milk in a large mixing bowl, and knead it into a dough with a stand mixer.
  2. Add butter into the mixing bowl, and keep kneading it for 15 minutes until the dough becomes smooth and high in strength.
  3. Cover the mixing bowl with plastic wrap, and place it in the microwave with a cup of hot water on the side. Let the dough rise for 1 hour or until it becomes double the size.
  4. Transfer the dough to the table after proofing, and gently press the dough to release the air from it. Do not knead the dough.
  5. Divide the dough into 3 equal pieces, and roll them into balls. Cover them with plastic wrap, and let them rest for 15 minutes.

  9. Preheat oven to 356F, and bake it for 40 minutes.
